Observed a three-compartment sink with food contact surfaces soaking in Quat sanitizer with a concertation of >500ppm. Educated PIC that all sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. PIC relocated all food contact surfaces to be rewashed, rinsed, and properly sanitized. Sanitizer was diluted by PIC to approved levels at time of inspection. Corrected at time of inspection.

Observed containers of chlorine wipe cloths made with less than 50ppm of chlorine at time of inspection. When asked PIC stated the buckets had recently been changed over but had not verified ppm with testing device. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrected at time of inspection.

Observed a large puddle of water in the back dry storage area. When asked, PIC stated the leak was coming from the wall and had started ~2 weeks prior to time of inspection. Observed water leaking on opposite side of wall behind cook and beverage prep-line. Educated PIC that all plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Correct prior to re-inspection on 2/10/26.
