Inspector's notes
Observed an employee in the kitchen area touch their phone with gloved hands, leave the kitchen to stock, and then return to prep food without discarding gloves and washing hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrected at time of inspection.

Inspector's notes
Observed a spray bottle of Quat sanitizer with a concentration of greater than 400ppm. When asked, employee stated they had prepared the bottle earlier that day. Educated PIC and employee that Quat sanitizer should not exceed 400ppm when test with appropriate test strips. Sanitizer was diluted by PIC to approved levels at time of inspection. Corrected at time of inspection.
