Observed cooked chicken near the fryer with internal temperature of 76 degrees Fahrenheit. Per PIC, chicken was cooked earlier today, and they took it out of the fridge for the dinner rush. Discussed that TCS foods must be kept either hot or cold, or use time as a control. Having a policy for such, and written documentation of what time food was taken out of the fridge. PIC wrote down the time it was taken out. Corrective Action: Corrected at time of inspection.
