Observed the following: Pico 48-50F, rolled tacos and crispy tacos 44-50F, salsa bottles 50F, and red and green salsa in bottles given to customers at 50-54F. PIC said they were held for less than 2 hours, and the products were moved to the walk in to cool or placed in ice baths. Discussed using 4-hour time as control for the salsa bottles and tacos, as they are taken out frequently and cannot maintain proper temperatures. ***1ST REPEAT VIOLATION Corrective Action: Corrected at time of inspection.

Observed a large container of green tomatillo salsa 47F and red tomato salsa 46F in the walk-in cooler prepared the night before. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed 5 bottles of cooked green tomatillo salsa, 1 bottle of cooked red tomato salsa, individually packed cooked red and green salsa and cooked carrot and jalapeno measuring between 45F and 48F. The person in charge indicated the food was in the unit since the night before. All TCS foods improperly cold held were discarded by PIC at time of inspection. Observed pico salsa with tomato over stacked with the top portion measuring 46F the pic indicated the salsa was there for 30 minutes. The salsa was placed in the walk-in cooler to cool down to 41F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
