Inspector's notes

Observed staff leave restroom and return to kitchen without washing hands. Staff was instructed to wash hands before preparing orders. Also observed another staff member drop a container on the floor, pick it up, and begin to continue completing order. Staff was instructed to discard gloves, wash hands, and put on new pair of gloves. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Provided handout. Corrective Action: Corrected at time of inspection.

The bucket was large enough to block any use of the handwashing sink. The bucket was removed from this sink at the time of inspection. Ensure all handwashing sink basins and surrounding area remain completely free of objects so the sink is always easily accessible and available for use. Final construction inspection. Construction complete and approved. Th following items were discussed for follow up:1). Decalcify the aerator on the restroom hand sink and make sure there is more water flow.2). Replace the hot water valve stem on the three compartment sink and stop the drip.One person working at the establishment will need to become a certified manager. Permit issued Eating and Drinking Class III 10+ Seating. Only the Tongue and pulled pork is cooked and cooled and re-heated.This establishment/operation has been evaluated and qualifies for the issuance of the permit. To complete the permitting process, meaning issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Note that fees paid up to this inspection approval did not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Checks and money orders are also accepted via US Mail. If you select payment via US Mail. Pre-final walk through with the superintendent. Backflow valve was tested 4/5/2024. The following items were discussed:1). Hood will need to be sealed to the back wall.2). Remove laser fil, from the side panel.3). Provide hot water at all the sinks. Water heater pan has standing water, check, repair and or replace.4). Ceiling will be restored around the hood with washable tiles.5). Note that you are required to provide a 6 inch overlap of hood over the equipment.6). For the owner, owner will need to be present:1). Provide all equipment on site.2). Provide soap and paper towels.3). Provide sanitizer, dish soap, non-latex gloves, test strips for the sanitizer, food thermometer.4). Provide sanitizer buckets and wiping cloths.5). Provide certified managers certification.6). Make sure all refrigeration equipment is commercial and in place and holding at proper temperatures.Final inspection is Thursday the 11th at 8 AM.No County legal action will result from this inspection.E-mailed to owner and superintendent.

First walk with the superintendent. The following items were discussed:1). The stainless steel under the hood is standing open. Please address and make sure it is sealed.2). Install metal coved base under the hood.3). Hood will be sealed to the wall, for the horizontal and vertical edges.4). Ceiling grid will be restored with washable tiles. Vinyl faced drywall will be approved around the hood.5). Please touch up the paint and repair wall where damaged.6). At the backflow valve, remove the manifold and have the soda company tie directly into the valve. Do not install copper downstream.7). Please have the backflow valve upstream of the soda system re-tested and certified.8). The water heater size is not sufficient for the type of business. Provide a 50 gallon water heater. The unit can be installed on a stand besides the mop cove.9). Please remove all water lines not used and cap, patch the wall.10). Please install an expandable plug in the floor sink that will be abandoned.Next inspection can be final inspection, when work is complete and all equipment is in place. Make sure refrigerators are holding at proper temperatures and provide hot water.No County legal action will result from this inspection.E-mailed inspection report.
