Observed two containers of veggie patties missing date marks in the walk-in cooler. Person in charge (PIC) said they cannot reliably say when the patties were placed in the cooler. Informed person in charge (PIC) that RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). PIC discarded the items missing the date marks. Corrective Action: Corrected at time of inspection.
