Observed food employee move two ready-to-eat (RTE) donuts from one tray to another tray with bare hands. Per food employee, donuts were ready for sale to customers. Bare hand contact is not approved with RTE food items. RTE food that was contacted by bare hands was discarded by food employee at time of inspection. Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Corrective Action: Corrected at time of inspection.

Observed listed food items (donuts with whipped cream, croissants with ham/cheese, and pastries with hot dogs) stored at front of establishment display case without time stamps. Per PIC, listed food items were on time as control for safety. Per food employee, listed food items were made one hour prior to start of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and timestamping for items actively held under Time as a Public Health Control. Listed food items being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Lack of knowledge for the person in charge has been portrayed due to the violations noted throughout this inspection. The PIC was unable to correct violations without instruction. The prep refrigerator the food was stored in measured with an ambient temperature of 51 degrees F and was known to not be in good working repair. The food had been stored in the unit for less than 3 hours and was moved to alternative refrigeration immediately. Discussed cold holding.
