Observed a heavy accumulation of food scraps/greases on the prep units, particularly on the side of the units and on the doors and gaskets. Discussed with person in charge to clean the prep units and to clean the kitchen generally on a more frequent basis to prevent the accumulation of greases and soils in the kitchen. The person in charge will have the unit cleaned and will clean the kitchen. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Inspector's notes

Observed several containers of tightly lidded beef soup inside of plastic containers inside of a reach-in refrigerator. According to the person in charge, the soup had just been cooked and placed into the fridge. The internal temperature of the soups was above 135°F as measured using a probe thermometer. Discussed with person in charge to cool foods in wide, flat shallow pans less than 4 inches deep, uncovered and to utilize ice baths to rapidly chill food down to 41°F. The person in charge prepared ice baths and placed the cups of soup into the ice baths to rapidly chill down to 41°F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
