Observed the prep sink having the hot water handle not functioning. Sink does have hot water available when turned on from the bottom. All sinks in the establishment must be maintained in good repair and working at all times. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-3-501.19 (B1,3-4; C1,4-5), P: Time as a Public Health Control; Temperature, Discarded. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources. --- Observed cut lettuce and cut tomatoes on the food prep table by the kitchen being present for over 4 hours at ambient temperature. Items in question use time as a control; prepped at 10:31am to be discarded at 2:31pm. Time as a control TCS food items should not exceed 4 hours at ambient temperature. At time of inspection at 2:54pm, the items in question have not been discarded yet. PIC instructed employee to discard the items and restock with new batches. New batches of cut lettuce and cut tomatoes were measured at 40'F and 41'F, respectively. New items were time marked to be discarded at 7:00pm. Discussed with PIC the importance of following time as a control procedures and to discard items accordingly within the 4 hour period. Violation was fixed at time of inspection.
