Inspector's notes

Observed in the walk-in a tomato sauce in a deep container more than 4 inches deep with an internal temperature of 47*F in the center. Also observed cooked chicken tikka and cooked vegetable mix at 45*F to 47*F in the bottom of the sandwich prep table at the entrance of the kitchen. Per person in charge (PIC) all items were cooked 2 hours prior to inspection and placed in the deep container or in the sandwich prep table. Discussed with PIC TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Discussed that adequate refrigeration is the walk-in refrigerator or the freezer and the sandwich prep table is designed for cold holding and not cooling TCS items. PIC relocated all items to a shallow container and into the walk-in refrigerator to properly cool. Corrective Action: Corrected at time of inspection.

Observed heavy cream on the shelf above the prep table at the entrance of the cookline with an internal temperature of 50*F and cooked cauliflower in a bowl resting on the top part of the prep table with an internal temperature of 47*F. Discussed with PIC Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC the 2 items were out of temperature for less than 4 hours. PIC relocated the cooked cauliflower and heave cream to adequate refrigeration to rapidly cool. Core-6-201.13, C: Floor and Wall Junctures, Coved, and Enclosed or Sealed ------- No cove base observed in multiple areas in the bar and kitchen, as well as detached rubber cove base under the three compartment sink. Observed parts of the FRP wall bulging out causing a space between the FRP and wall, which may provide pest harborage conditions. Please provide new rubber base and repair existing rubber base prior to the next routine inspection. All floor/wall junctures must be provided with a 3/8th inch minimum cove base for cleaning and maintenance.
