Corrective Action: Corrected at time of inspection. Chlorine sanitizer at less than 25 ppm in automatic low temperature dishwasher. Manager determined the sanitizer and detergent lines had been switched, corrected the connection and restored proper chlorine level of 50-100 ppm.

Corrective Action: Corrected at time of inspection. Employee wearing gloves touched their clothing and continued handling food. Employee bussed dirty glassware and returned to food handling without washing hands. Had employees wash hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks.
