RI FDOwner provided log sheet for using time as a control for public health safety for the pre-fried chicken holding at room temperature. Ensure employees fill out start time, end time and pound of cooked chicken when put at room temperature and pound of discard chicken. Maintain log sheet at the site and provide log at each inspection.

Noted containers of cooked chicken stored on the shelf at the packaging area. Temperature was measured at 108*F. Chicken were fried at 10 AM. Per kitchen manager, the establishment is using time as a control for public health safety. When asked for written policy, manager provided the Department's guidance document for creating time as a control for public health safety as their policy. Using the guidance document, provide a written policy for using time as control for public health safety and monitoring procedure. The procedure must be trained to staff, monitoring logs or waste logs must be provided, documented in log sheets and maintain inside the facility for inspection purpose. Document must have when, what, who, how, and verification.
