Inspector's notes

-- Chicken wings in reach-in refrigerator near fryer had an internal temperature ranging between 45°F-47°F using probing thermometer. The ambient temperature of unit measured between 44.1°F-45°F using min/max thermometer. The PIC stated food safety temperature checks were done less than an hour prior to the inspection and the unit was maintaining TCS foods at or below 41°F. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit (walk-in) to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
