Observed an in-use knife being stored between lids of the prep table with food debris present. Spoke with the kitchen manager and the knife was placed into the dish area. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. Inspector's notes

Observed multiple 5-gallon containers of partially cooked chicken wings, sealed and stacked on top of each other, actively cooling in the walk-in refrigerator. The chicken wings registered internal temperatures ranging between 60°-68°F with a probing thermometer. Per manager, the wings were partially cooked 2 hours prior to inspection. The establishment shall organize and contain the partially cooked wings in a manner that maximally facilitates the cooling process. Instructed the manager to open each container and arrange them so that they are not stacked on top of each other until they have reached 41°F. Corrective Action: Corrected at time of inspection.

Observed mechanical dishwasher using chlorine-based sanitizer measuring 0 ppm after running multiple cycles and priming the dishwasher. Observed no sanitizer being pulled through the line. Per manager, the dishwasher is a new unit and was installed 2 weeks prior to the time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing to prevent the accumulation of pathogens. The manager contacted repair services at the time of inspection. Instructed the establishment to utilize the 3-compartment sink for all dishwashing until repairs have been completed. Corrective Action: Correct prior to re-inspection. *Reinspection will take place on, or before, Monday August 19th.
