Concentration of chlorine sanitizer solution at in-use mechanical dishwasher was measured at 0ppm after running machine and priming sanitizer line several times. Chlorine sanitizer solutions for food contact surfaces shall be maintained at 50-100ppm. Person in charge (PIC) directed employees to wash dishes manually until adjustments were made and contacted chemical provider during inspection. Corrective Action: Corrected at time of inspection.

Observed portion cups of labneh cheese requiring refrigeration with internal temperatures of 62 degrees Fahrenheit in a plastic container stored at ambient temperature near pickup counter and cucumber salad with feta cheese at 60F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), labneh was portioned less than 1 hour prior to inspection. Labneh was moved to walk-in refrigerator to cool rapidly and ice was added underneath 1/3 size pan of cucumber salad - inspector verified temperatures. Establishment only has reusable dog bowls available. Please ensure single-use, disposable bowls or other containers are available for use by guests' dogs. Corrective Action: Correct prior to next routine inspection. See INSP-008288-2025 MCEHC Chap. 8, Sec. 2, Reg 4(d) [4] - All dog waste shall be placed in a fly-tight container located adjacent to the patio area and disposed of outside of the food establishment in an appropriately covered waste receptacle. Equipment used to clean the outdoor patio must be kept outside of the food establishment. Addl Notes: Establishment does not have fly-tight container for animal waste set up at the patio. Please ensure a fly-tight container is available at the patio for disposal of animal waste prior to storage in primary waste receptacle for the establishment. Per PIC, the chicken was prepped and placed in deep pans 2.5 hours prior to inspection. The raw chicken were transferred to a shallow pan and placed in the freezer to rapidly cool at the time of inspection. Discussed the importance of proper cooling methods to allow for proper cooling with the PIC. All items should be cooled in uncovered, shallow pans in the walk-in, by using an ice bath, or another effective means. Foods must be cooled from 135'F-70'F in the first 2 hours and from 70'F-41'F in the next 4 hours for a total of 6 hours. Correct By: Corrected At Time Of Inspection
