Observed TCS items such as shredded lettuce and veggie burger mix being cooled in covered containers. All TCS items were at an appropriate temperature given the stage in the cooling process. All TCS foods cooling were uncovered to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Discussed assuring items are at 41°F before placing in deep, covered containers. Corrective Action: Correct prior to next routine inspection.

OF NOTE: Ambient temperature of walk-in refrigerator was measured at 50F with min-max thermometer during inspection. Majority of TCS foods that were out of temperature during the inspection were prepared less than 4 hours prior to inspection and relocated to alternate refrigeration. PIC contacted technician, who arrived during the inspection. Will follow up on 6/13 to verify completion of repairs.

Chlorine sanitizer solution concentration at in-use mechanical dishwasher was measured at 0ppm after running machine and priming sanitizer line several times. Chlorine sanitizer solutions for food contact surfaces should be maintained at 50-100ppm. PIC directed employees to wash dishes manually until repairs are completed and contact chemical provider during inspection. Corrective Action: Corrected at time of inspection.

Observed containers of alfalfa sprouts with internal temperature of 49F in walk-in refrigerator. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, sprouts were delivered and placed in unit several days prior to inspection. PIC voluntarily discarded sprouts - see embargo form. Corrective Action: Corrected at time of inspection.

Observed a sheet pan of roasted turkey breast cooling at 90F in a walk-in refrigerator that was not holding cold at time of inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per PIC, turkey was cooked less than 2 hours prior to inspection. PIC moved turkey to chest freezer to cool rapidly - inspector verified temperature. Observed open containers of raw ground beef and containers of raw chicken stored above a box of raw shell eggs in the walk-in refrigerator. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Visible existing contamination was not observed. Person in charge (PIC) dumped out the bucket and made a new batch at 150 ppm at the time of inspection. Quaternary ammonium sanitizer levels must be between 150-400 ppm, or manufacturer's recommendation. Discussed the importance of proper sanitizer levels with the PIC. Per PIC, the chicken was prepped and placed in deep pans 2.5 hours prior to inspection. The raw chicken were transferred to a shallow pan and placed in the freezer to rapidly cool at the time of inspection. Discussed the importance of proper cooling methods to allow for proper cooling with the PIC. All items should be cooled in uncovered, shallow pans in the walk-in, by using an ice bath, or another effective means. Foods must be cooled from 135'F-70'F in the first 2 hours and from 70'F-41'F in the next 4 hours for a total of 6 hours. Correct By: Corrected At Time Of Inspection
