Observed items in three door sandwich cooler across from grill at 44-45*F. Items included sliced turkey (45*F), sliced and diced tomatoes (44*F), process jalapenos and salsas (44-45*F). Cold hold of food to be 41*F or lower. Items were placed into walk in cooler and small two door counter heigh refrigeration in kitchen. Observed shrimp in same refrigerator at 46*F. As per owner, item had been in cooler since the day before and was discarded. Advised person in charge to have staff check food temperatures after meal rushes to ensure food remains at 41*F during the day. 2nd consecutive violation Corrective Action: Corrected at time of inspection.

Observed sandwich prep cooler on site with an internal ambient temperature of 46-47*F using max/min thermometer, Cold hold equipment must be able to maintain food at 41*F or lower. Owner contacted repair company for repair. Temperature control for safety foods were moved to walk in cooler and small prep cooler in kitchen. Items frequently used were placed in ice bath to keep at 41*F. Corrective Action: Correct prior to re-inspection. 2nd Consecutive Violation Reinspection to be completed on of before Thursday, Dec 4, 2025. Emailed service receipt and photo of thermometer in refrigerator.

Observed hot dogs 44*F, buttermilk ranch 46*F, TCS salsa with cut tomatoes 47*F, grilled mushrooms 46*F, cooked rice 48*F, deli roast beef and turkey 44*F in the walk-in cooler. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC walk-in cooler went through a defrost cycle within the past hour. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
