Inspector's notes

Observed TCS food items underneath the cold table measure 44*F-53*F per inspectors and establishments probing thermometer at the time of inspection. TCS food items included various leafy greens, soft cheese, meatballs and cut tomatoes. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, TCS food temperatures were verified less than 41*F within the previous 4 hours prior to the time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. PIC noted prep table door is not currently sealing properly and is putting in a work order to get corrected. Corrective Action: Corrected at time of inspection.
