The establishment has liquid bleach and chlorine test strips. Demonstrated how to use bleach for sanitizing with staff, and diluting to 50-100ppm until the quat concentration has been adjusted. Observed the large blade slicer used to slice lunch meats with TCS food debris around the blade. PIC stated it was not used today. PIC described the cleaning process and described how the parts disassemble. The unit was re-cleaned. Food contact surfaces must be cleaned every 4 hours to prevent contamination and bacterial growth. Observed the following TCS food items in the cooler on the assembly line: On the right side of the line: shredded lettuce 50F, sliced tomato 50F, spinach 50F. In silicone boats on the left side of the line: rotisserie chicken 53F, steak 53F, and chicken breast 53F. PIC discarded the meats, as the last temperature check had been from 7:30am. Inspector lowered the thermostat on the unit to the right of the assembly line. It now reads 39F. PIC discarded all the items, and placed an ice bath under the newly placed spinach, tomatoes, and lettuce on the refrigeration temperatures to the right. Discussed placing only one layer of meats in the boat, as they are not holding temperature properly. Also discussed using 4 hour time as control is desired.
