Cooked pork belly being stored on flat top measured 101 degrees F, item had been cooked around 30 minutes prior but there was no water in the warming pan. Pan was refilled and item was covered to reheat at time. Please ensure time/temperature controlled for safety food items are maintained at 135 degrees F or above when hot holding. Corrective Action: Corrected at time of inspection.
