Inspector's notes

Observed several food items that are received and stored frozen, to be thawed and not solid to the touch, such as onion rings, chicken tenders, mozzarella sticks, and pizzas, stored in the freezer on the cook-line. According to PIC, the TCS foods were frozen solid the morning of the inspection and the freezer appears to not be working adequately. PIC placed the TCS foods into the walk-in freezer and will limit the use of the reach-in. Stored frozen foods shall be maintained frozen unless in the process of slacking or thawing. Corrective Action: Corrected at time of inspection. 3-501.15 (A) - Priority Foundation: Cooling Methods. Addl Notes: Observed cooked penne noodles, fettuccini, and chicken wings cooling during the inspection. The cooked pasta was placed directly into the top and bottom of the cook-line prep cooler after being cooked; thirty minutes were left to reach 41F. The chicken wings were cooling in the walk-in cooler on a sheet pan on the speed rack. Wings observed to be stacked and close to other sheet pans, limiting airflow. PIC split the wings between two sheet pans and placed into the walk-in freezer to cool to less than 70F in the next 30 minutes and the pasta was placed into the freezer to cool to under 41F within 30 minutes. PIC will review cooling methods with employees. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Observed several (50+) fruit flies in the prep area, near the soda bibs, mop sink, and in the bar. Reviewed the pest control records and discussed contacting the company for an additional treatment. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence by routinely inspecting incoming shipments of FOOD and supplies, routinely inspecting the PREMISES for evidence of pests and eliminating harborage conditions. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection on 8/20/2024. Corrective Action: Correct prior to re-inspection.
