PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed a reach in cooler holding 48F ambient air temperature. PIC observed the unit plug to be loose, and plugged it back in. Observed reduced fat milk 48F, half & half 46F, and fat free milk holding 50F. PIC stated the products were put into the unit an hour prior. The items were moved to a cooler already holding 41F or below. Also observed whipped cream in canisters holding 54F in one, and 67F in another. PIC did not know what time they were taken out of temperature control. PIC stated that the canisters run through the high temp dish machine the previous night, then get stored in refrigerators to cool down to 41F or below prior to use. PIC believes the canisters were left out too long, and discarded both. TCS food items must be stored at 41F or below when cold holding. Correct By: Corrected At Time Of Inspection
