In a small refrigerator/64F in the sushi area, observed eel/66F and cheese/64-69. In the beverage cooler/52F in the side server area, observed tofu/51F. Except during preparation, cooking, cooling or when time is used as a control maintain these TCS foods at 41°F or below. The TCS foods improperly cold held for an indeterminate amount of time were voluntarily discarded by PIC at time of inspection. Staff to use other refrigeration units until the refrigerators are repaired. Corrective Action: Corrected at time of inspection.

Inspector's notes
After loading dirty wares into the mechanical dishwasher, the worker rinsed his hands with the sprayer, and then he dried his hands with a cloth towel. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. The PIC instructed worker. Train staff as needed. Corrective Action: Corrected at time of inspection.
