#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed previously canned beans, cut tomatoes, dairy yogurt, and shredded cheese 44*F-51*F in a cold table on the cookline at the time of inspection. Also observed a bowl of mixed leafy greens 73*F on a table in the middle of the cookline at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, temperatures of the TCS food items had been taken less than 4 hours prior to the time of inspection and were verified to be 41*F or less at that time. Per PIC the mixed leafy greens had been recently placed in a bowl on the counter and the PIC decided to time stamp and use 4 hour time as a control moving forward. The PIC instructed the cook to place bags of ice on the TCS food items improperly cold held to rapidly cool to 41*F or below at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed rubber spatula in standing water on the grill top at 123*F, tongs handing on oven equipment handle, and bench scraper stored wedged between equipment on the cookline at the time of inspection. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed tomato basil soup holding on a steam table on the prep line at 107°F. According to the cook, the tomato basil soup had been removed from the walk-in about an hour prior. Per cook, servings of the soup were heated and served earlier and the rest of the soup was put on the steam table. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Tomato basil soup was reheated to 165°F at time of inspection. Discussed proper hot holding and reheating practices with the person in charge (PIC) during the visit.
