Observed drain lines from drink prep station including soda machine and ice cooler by hand sink directly inside into the floor drain. Advised Person in charge (PIC) to prop up drain lines to ensure one inch minimum air gap above the floor sink flood rim. All plumbing must be maintained in good repair at all times. PIC propped up drain lines at time of inspection. Corrective Action: Corrected at time of inspection.

Observed clear, plastic buckets wet and stacked for storage. Person in charge (PIC) stated dishes were just washed and placed on storage rack. Instructed PIC to unstack the bins to let them fully air dry. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Observed cooked sliced turkey in cold top on cook line range in temperature between 45*F and 53*F. Per person-in-charge (PIC), turkey was prepped and placed into cold top around 7:00 AM. PIC relocated sliced turkey to facility walk-in at time of inspection. Discussed with PIC to ensure fill lines of containers in cold top are not exceeded to ensure proper cold holding. Observed multiple containers of fresh squeezed juice, containing kale, apples, oranges, and milk located in lower cold holding unit on server line range in temperature between 46*F and 49*F. Ambient temperature in cold holding unit was at a minimum of 49*F. PIC placed juice containers in an ice bath in facility walk-in and readjusted temperature inside cold holding unit at time of inspection. Except during preparation, cooking, cooling or when time is used as a control, all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

In walk-in refrigerator observed two containers of raw turkey burger being stored directly over veggie burgers and packages of cheese.
