Cold holding prep unit along cook line was holding TCS foods between 46-56*F. TCS items included sour cream, guacamole with cut tomatoes, cut tomatoes, cut lettuces, salsa, deli ham, deli turkey, tuna, and blue cheese. Per PIC the unit was checked at 10:30 (about 3 hours prior) and unit was temping properly. It was discovered that the cold holding unit had been unplugged. The unit was plugged back in and it began to obtain 41*F. TCS items on top part of prep unit were placed on ice to cool to 41*F, and items in bottom portion of unit were moved to walk-in refrigerator to cool to 41*F.
