Observed establishment hot holding cooked chili in back of house prep area. Internal temperature of Cooked chili with inspector and establishment thermometer is at 116*F. Notified Person In Charge(PIC). PIC confirmed internal temperature. PIC stated Chili was prepared before 4pm. Time of inspection is after 7pm. Directed PIC to discard improperly hot holding cooked chili. =========Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. Corrective Action: Corrected at time of inspection.

At time of inspection no time identifiers could be located for today 8/28 on multiple containers. No time markers were observed for cut lettuce; cut tomatoes; and slices of American Cheese. Notified Person In Charge(PIC). PIC applied correct time stamps for tilt products listed.======== If utilizing 4 hours and no temperature control: The food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control.
