The amount bag of cooling beef observed to be thick, without adequate airflow due to sheet pans above and below it, and stored next to the door of the walk-in. According to PIC, the procedure is to fill the bag half full and place it in the walk-in freezer in order to cool the beef from 135-70F in 2 hours and from 70-41F in the next 4 hours. PIC instructed employee to divide the bag in half and place into the walk-in to cool to 70F in the next 30 minutes. Cooling TCS foods is facilitated by placing it in a shallow layer in the coolest part of a walk-in cooler, uncovered or loosely covered and with adequate airflow around the container.
