Inspector's notes

Observed shredded cabbage, egg rolls, cooked chicken, raw chicken, and orange chicken with an internal temperature of 57-60*F. According to PIC, raw chicken had been previously thawed under running water prior to moving to reach-in cooler. Discussed approved thawing methods with PIC. All other TCS foods had been prepped more than 5 hours prior to inspection and were discarded at time of inspection. Discussed approved cooling methods and also discussed changing defrost cycle of reach-in cooler overnight instead of during the day to help maintain temperatures below 41*f at all times.

Discussed cold holding temperatures for TCS foods and suggested alternatives for draining water.
