Addl Notes: Observed same male staff member handle seasoned raw beef container and tongs with gloved hands. Gloves had visible soilage. Staff member wiped gloved hands off with a towel and continued to handle tortillas. Corrective Action: Corrected at time of inspection. Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Predefined Comment: Employee properly washed hands at handwash sink at time of inspection. Predefined Comment: Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.

Inspector's notes

Observed female staff member cutting red bell peppers from a produce box with the remaining peppers to have a significant amount of blue and white organic matter. Instructed to have staff member discard entire box. Staff member instead continued cutting trying to remove organic matter and salvage product. Any food that comes into contact with an adulterant must be discarded. Inspector instructed the entire case be thrown away immediately. Corrective Action: Corrected at time of inspection.
