-- In walk in refrigerator, observed the following RTE TCS items date mark labeled: ceviche (7/2/25), rolled beef tacos, (7/3/25), pico de gallo (7/3/25),containers of green salsa (6/28/25), pork carnitas (no date), green chili with beef (no date), cooked red chicken (no date), beef birria (no date). The person in charge stated the rolled beef tacos and green salsa was prepared on 7/7/25, they were unsure when the pork carnitas were prepared, and the green chili with beef, cooked red chicken, and beef birria was all prepared 5-7 days prior to the inspection. All RTE/TCS foods past 7 days of preparation (pico de gallo, pork carnitas, ceviche) were discarded by PIC at the time of inspection. All RTE/TCS foods that had been prepared within 7 days or less (rolled tacos, green salsa, green chili beef, cooked red chicken, beef birria) were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).

Observed individual packets of red/green taco sauce, cooked beef tacos, cooked shredded beef, shredded lettuce, fried peppers, cooked pork green chili, raw pooled eggs, marinated chicken, shredded cheese, diced tomatoes, cooked shrimp, tomato salsa, chopped cooked pork sausage, and cooked beef tongue in walk-in refrigerator measuring 44 - 49 degrees F. Per person in charge (PIC) and date marking labels, the food items had been prepared and placed in refrigerator within the last few days; greater than 4 hours. PIC also stated the food items were not recently prepared, or a new food order was received. Ambient temperature of walk-in refrigerator was 41 - 42 degrees F. Refrigerator fans were blowing 28 - 44 degrees F. Recommended to PIC having the refrigerator inspected. Advised PIC that the food items are time/temperature control for safety (TCS) foods, which must be held below 41 degrees F. PIC stated they will discard the food items, and ensure TCS foods are held at proper temperatures. Correct By: Corrected At Time Of Inspection
