Discussed the following topics with the kitchen manager: 1) running multiple cycles at the bar mechanical dishwasher to ensure high temperature sanitization is being achieved for food contact surfaces 2) proper storage of dining utensils. Per management, the establishment will be undergoing some dining room renovations next month. The scope of the work is limited to the dining area and includes changing flooring and furniture. For the duration of the renovation, the establishment will be utilizing a fully enclosed tent with portable air conditioning for their guests and will continue to serve food from the main kitchen.

Observed glass scrub brush and food debris in the hand washing sink at the bar area. Spoke with PIC and items were removed. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Corrective Action: Corrected at time of inspection.

Observed food build up on the can opener blade that was not in use at time of inspection. Spoke to PIC and the can opener was placed in the dish area to be washed, rinsed, and sanitized. No chlorine sanitizer detected in mechanical ware washing machine using chlorine test strips. Machine was sent through another cycle and sanitizer line was primed with no change to chlorine concentration. Food-contact surfaces must be properly sanitized after washing and rinsing. PIC called ware washing machine company for a repair. The three compartment sink will be utilized for sanitizing all dishes until the mechanical ware washing machine can be repaired. Corrective Action: Corrected at time of inspection.
