Multiple cartons of pina colada mix and whipped cream-61-62F in the reach in cooler in the bar area. PIC voluntarily discarded all items-see embargo form. Keep PHF/TCS foods in cold holding at 41F or below. *Ambient temperature of the reach in cooler in the bar area was 66F. PIC removed all food items from the unit and stated that the unit would not be used until it is maintaining 41F or below. Establishment has sufficient refrigeration. Corrective Action: Corrected at time of inspection.

Observed 500 ppm quat sanitizer in the 3-compartment sink actively being used in the bar. Person in charge drained and refilled 3-compartment sink to proper quat sanitizer levels between 150-400 ppm quat at the time of inspection. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection.

With contaminated left gloved hand cook began to directly touch raw fish from freezer unit into deep fryers. Notified Person In Charge (PIC); PIC reviewed events with cook and had cook wash contaminated left hand. Also observed same employee take off gloves and put on new gloves. Notified PIC. Each time before new gloves are put on will require hands to be washed prior. ===== Employee not washing hands after engaging in other activities that may contaminate the hands. Top of oven cooked lobster tail was at 118*F; other lobster tails were cooked with internal temperature of 112*F-141*F. Notified Person In Charge (PIC). PIC verified internal temperature and recooked all lobster tails to above 145*F. ==========Minimum safe cooking temperature for raw fish is 145*F.
