Inspector's notes

Temporary handwashing owned by catering company was not functioning in the serving room. Allowed temporary fix for hand washing sink to get through lunch period. A 24 hour reinspection will be conducted to verify that the hand washing sink has been repaired and is operating correctly. If hand washing sink is not repaired then food will be served out of the permitted kitchen. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Correct prior to re-inspection.

Observed cartons of plain and chocolate milk with internal temperatures of 50 degrees Fahrenheit. Milk was stored in reach-in refrigerator that was holding at 49F ambient air temperature as measured with min-max thermometer. Please ensure all time-and-temperature control for safety (TCS) foods are maintained at 41F or colder. Per person in charge (PIC), milks were placed in serving area for school breakfast service and returned to refrigerator 1 hour prior to inspection.
