Observed corn salsa, Pico de Gallo, guacamole, habanero salsa, and salsa fresca with temperatures between 45-57*F, per PIC had been placed into the units (the cold holding unit for the to-go line and both units for the main line) at 10:30am and 1:30pm. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed proper cooling methods. Corrective Action: Corrected at time of inspection.
