At in use wiping cloth buckets, quat sanitizer with a concentration <100ppm. Employee exchanged almost empty bottle of quat sanitizer with a full bottle and was instructed to exchange all sanitizer wiping cloth buckets and containers. All wet wiping cloths are to be stored in sanitizer buckets with approved sanitizer concentrations. Corrective Action: Corrected at time of inspection.

Per employee, jugs of milk were removed from cold holding within normal time parameters. Jugs of milk were moved to reach in coolers to rapidly cool back down to the proper cold holding temperatures.
