In sushi area, employees walking through swinging door to wash hands then re-entering through swinging doors to prep sushi. Instructed employees to use handwashing sink through deli, where no doors are present. Instructed employees to re-wash hands at handwashing sink in deli. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands are to be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

In self service cold case, assorted packaged sushi/ 49*F-55*F, cooling in covered containers. Per manager, packaged sushi was prepared and placed in walk in freezer about 10 minutes. Manager moved packaged sushi back to walk in freezer to continue the cooling process. Recommended additional time in walk in freezer, after preparation, to ensure proper cooling temperatures within proper time frame.
