Observed diced chicken, italian sausage , beef topping, at 45-47*F. Cold hold of food to be 41*F or lower. As per the person in charge items were puled from walk in cooler and filled at approximately 10 - 10:30 am. Items were placed in walk in cooler to cool back to 41*F. Lids were placed on containers in pizza prep cooler and temperatures were observed to be at 42*F. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed that top portion of pizza prep table (line 1) was unable to keep food at 41*F. Placed lids on food items and obtained temperatures at 42-43*F. Staff placed ingredients into walk in cooler and base of pizza prep cooler to keep at 41*F. GM contacted repair company to for repair. Corrective Action: Correct prior to re-inspection. Reinspection to be completed on 1/19/2026 to verify equipment is working correctly. Manager may also email /text invoice and thermometer showing prep cooler is working.
