Inspector's notes
Observed chopped salad mix holding 64F. PIC said they are using temperature control and provided logs to show initial start times and temperatures. Inspector discussed using deeper containers when placing TCS food items in open refrigeration units, to allow for proper air flow. PIC will serve the rest of the salad within the hour, and the salad had been out of temperature control for an hour. Please monitor temperatures of TCS food items once removed from the walk-in to ensure they are holding proper cold temperatures. Corrective Action: Corrected at time of inspection.
