Observed queso sauce hot holding with an internal temperature of 98*F when measured with a probe thermometer. All TCS (time and temperature controlled for safety) foods must maintain internal temperatures of 135*F and above. According to employee, can of queso is placed directly into the heater, and heat is turned off overnight with queso left inside. Discussed heating queso in the microwave to at least 135*F and placing in a separate container before placing in the heater. Queso must be cooled and held in the walk-in cooler overnight if there are leftovers. Queso was discarded at time of inspection. Corrective Action: Corrected at time of inspection.
