Cooked potatoes in hot box found with internal temperatures of 118-136*F with the warmer ones being in the back of the unit. PIC stated they had been in the unit for about 20 minutes and reheated them to 170*F and placed back in the unit. Other hot held items in the unit were above 160*F.

Hard boiled eggs and cut cherry tomatoes on cold table with internal temperatures of 41-53*F. PIC stated the items were prepared about 2-3 hours ago and placed directly into the prep top cooler (top section). Thousand Island dressing also found with internal temperature of 52*F in the same cooler but was double panned above the lettuce. PIC discarded the dressing and moved the eggs and tomatoes to the walk-in for rapid cooling.

Reviewed HSP requirements: in facilities serving a highly susceptible population, unpasteurized eggs are only to be hard-boiled or used for baking purposes. Advised due to egg shortage, the unpasteurized eggs may be used, but must be fully cooked. The PIC stated the unpasteurized eggs are only being fully cooked at this time. Requested the PIC remove "eggs any style" option from menu until pasteurized eggs are available.

Advised the person in charge (PIC) that when serving a HSP (Highly Susceptible Population) only pasteurized eggs must be used, except when baking or hard-boiling. The PIC stated they were sent case of unpasteurized eggs due to an egg shortage. Informed the PIC the unpasteurized eggs can be used for baking, hard-boiling, or must be fully cooked. Pasteurized eggs MUST be used for undercooked/runny eggs (over-easy, soft-boil, poached, etc.)
