No County legal action will result from this inspection.Discussed the replacement handwashing sink for the prep area and re-caulking the handwashing sink in the dish pit, the drainboards, and 3-compartment sink. Also discussed installing a U-shaped toilet seat in the employee restroom.
Inspector's notes
Observed the dishwashing employee placing soiled dishes on dish racks with gloved hands. The employee then started to remove clean dishes from a recently washed rack from the dish machine, without removing gloves and washing hands. Inspector notified person in charge (PIC); PIC instructed employee to wash hands. Discussed the importance of washing hands after contamination and prior to handling clean utensils, food etc. in order to prevent the transfer of pathogens. PIC will retrain employees on proper handwashing and when to wash. The hands are particularly important in transmitting foodborne pathogens. Food employees with dirty hands and/or fingernails may contaminate the food being prepared. Therefore, any activity which may contaminate the hands must be followed by thorough handwashing in accordance with the procedures outlined in the Food Code. Corrective Action: Corrected at time of inspection.

Certified Food Protection Manager not at establishment during the inspection. Maricopa County requires all establishments that serve open food, which requires time/temperature control for food safety, to have at least one certified Food Protection Manager (CFPM) on staff. The Person in Charge shall be a CFPM and is required to be onsite during the hours of operation. This certificate must be visible or readily accessible. Corrective Action: Correct prior to next routine inspection.

Observed the ware washing machine to have an accumulation of soil, debris, and what appears to be calcium on the interior and exterior surfaces. Discussed deliming and cleaning the inside of the ware washing machine. Equipment used to wash and sanitize must be cleaned: before use, throughout the day at a frequency necessary to prevent recontamination of EQUIPMENT and UTENSILS and to ensure that the EQUIPMENT performs its intended function, and if used, at least every 24 hours. Corrective Action: Correct prior to next routine inspection.
