Equipment that is stationary (not easily moved) and subject to moisture must be sealed and maintained to prevent the harborage of insects and rodents. Cottage cheese, hummus, hard boiled eggs, deli sandwich, pepperoni, ham, and enchiladas with no date marks in the walk in cooler. PIC stated that all items were made and/or opened within the last 6 days and provided date marks. PHF/TCS food should be clearly marked to indicate the date the food shall be consumed or discarded when held at a temperature of 41°F or less for a maximum of 7 days. The handwash sink next to the dietary office was not draining. The maintenance person repaired the sink at time of inspection. The mop sink was not draining and had a significant amount of standing water present. Ensure that the plumbing is repaired properly and maintained in good repair. -- Observed employee spray off dirty dishes with gloved hands, then start to head towards clean dishes to put away without washing hands and changing their gloves between tasks. Inspector intervened and requested employee wash their hands before putting away clean dishes. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. -- Observed container of raw chicken breast stored above closed/sealed case of sliced bread in walk-in refrigerator. No visible contamination observed. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
