Observed the cold-water handle broken off at the hand sink and the hot water handle calcified where it is almost non-operational. PIC stated they have a new hand sink and will have it installed within the next few days. Observed the hot and cold water turned off at the mop sink. PIC stated that the handles do not work and they use the on/off valves to turn on the water. Informed PIC that the handles need to be operational. Discussed with PIC that all plumbing must be brought into good repair prior to next routine inspection. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed no probe thermometer available for the measuring of food temperature at time of inspection. Discussed with PIC that they need to obtain a probe thermometer in order to accurately measure the final temperature of animal proteins and verify the starting temperature of the products placed on the salsa bar held on time as a control. Properly calibrated probe thermometers are required at all times for monitoring food temperatures. Must provide a probe thermometer for establishment prior to re-inspection. Corrective Action: Correct prior to re-inspection on 7/20/2026.

Observed in house salsa and cut cabbage in the salsa bar having internal temperatures of 63*F. Person in charge states these foods were placed in the unit less than 3 hours prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
