At in use 3-compartment sink, dishware soaking in quat sanitizer solution with a concentration <150ppm. Per person in charge, sanitizer was made about 1000am. Sanitizer water was emptied out of basin. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels throughout the day, especially after busier times of warewashing. Corrective Action: Corrected at time of inspection.
