-- In reach-in refrigerator near soft-serve machine, observed iced coffee, milk, and whipped topping with internal temperatures ranging from 52°F-54°F using probing thermometer. The ambient temperature of unit measured at 50.5°F using min/max thermometer. The person in charge (PIC) was unsure how long the items were in the refrigerator and voluntarily discarded them at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

-- The ambient temperature of reach-in refrigerator near soft-serve machine measured at 50.5°F using min/max thermometer. See violation above. All TCS items were removed and discarded from the refrigerator at the time of inspection, and the PIC stated they will place a work order for repairs. The establishment has sufficient refrigerator space to safely remain open while awaiting equipment repairs. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.

Repeat Violation PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Sliced tomato and sliced cheese in prep top cooler found with internal temperatures of 50-51*F, verified with inspector's and PIC's calibrated probe thermometers. PIC stated the cooler was last found to be at proper cold holding temperature at 10:00 AM. PIC discarded the tomato and cheese. Other TCS food items were found to be at 41*F or below in the cooler. The ambient temperature of the cooler was about 43*F. PIC stated the cooler was opened frequently during the lunch-rush. PIC will continue to monitor the cooler and ensure the ambient temperature returns to 41*F or below and is able to maintain that temperature to cold hold food items at 41*F or below. There is a lot of heat coming off the nearby expo station which may have caused the tomato and and cheese to come out of cold holding temperatures. Please ensure cold held TCS food items are maintained at 41*F or below. Correct By: Corrected At Time Of Inspection,Repeat Violations: 3rd
