Sushi rice left out over night at 81 F with intention to use as per observations and person in charge. As per person in charge their process is to let sushi rice cool so as to be able to handle, make sushi rolls followed by placing sushi rolls and any remaining sushi rice into cold holding. As per person in charge due to limited sales of sushi rolls he would like to keep with this process. Reviewed time as food safety control as well as obtaining a variance for shelf stable sushi rice. Reviewed how to check thermometer calibration using ice water at 32 F. Instructed person in charge to discard previous day rice.
