Recommended printing time/date-marking sticker at the point of reaching 135°F to more accurately monitor cooling process with the manager. In addition, recommended providing additional metal wire storage rack for storing tubs of blanched fries in order to provide additional space between tubs to further facilitate the cooling process prior to placing tubs into the walk-in refrigerator.

Observed unattended hose with attached spray nozzle at the mop sink. In addition, the water was turned on and water was leaking from the handle at the faucet. The establishment shall remove the spray nozzle from the hose when not in use to prevent sustained pressure from compromising the functionality of the AVB backflow device. In addition, observed multiple cove tiles broken in high traffic areas of the kitchen. Corrective Action: Correct prior to next routine inspection.

Several plastic tubs of parcooked julienne potatoes for French fries in walk-in refrigerator were stacked directly underneath other tubs of potatoes, limiting access of cold air to the cooling potatoes. Please ensure cooling foods are cooled in containers or with equipment that will facilitate the cooling process. Person in charge (PIC) instructed employee to rearrange containers to allow for more consistent exposure of cold air.
