PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Bottom portion of make table found with cut tomatoes with internal temperature of 47*F. Ambient temperature of the cooler was also found to be 47*F. PIC was aware the cooler was not holding an ambient below 41*F and has put a work order in for the cooler to be serviced. PIC stated the tomatoes were placed in the cooler about 3 hours ago and moved them to the walk-in for cooling and continued cold holding. The tomatoes were found to be 41*F before the end of the inspection. The only other TCS food item in the lower portion of the cooler was grated cheese which still had an internal temperature of 41*F and was moved the walk-in for continued cold holding. The lower portion of the cooler will not be used for cold holding TCS food items until it is repaired and able to maintain an ambient temperature of 41*F or below. Alternate nearby cold holding units are available to continue normal operations. Please ensure cold held TCS food items are maintained at 41*F or below. Correct By: Corrected At Time Of Inspection
