Inspector's notes

Observed the insides of whipped cream carafes stored as clean in the reach in cooler with food debris on the inside of the carafe. Per PIC, the carafes are put in the high temp dishwasher after every use and not generally scrubbed. Advised PIC to pre-clean with a scrub brush and soap before utilizing the dishwasher to ensure all food contact surfaces are cleaned to the sight and touch. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Discussed proper hand washing with PIC. Hands must be washed after touching any part of the body, or face, using personal items and when using wiping cloths stored in sanitizer before handling any food or drink item. Explained to PIC that the AVB valve is not designed to be continuously under pressure and that there shouldn't be any obstructions downstream from the AVB valve.
